Turkish red lentil and bulgur soup recipe

A rich tomato and red lentil soup slow-cooked with mint, onion and lemon. A one-pot recipe that will keep you coming back for more!!

 

Prep time: 15 mins

Cooking time: 30 mins

Servings: 4


1 cup of lentils

1/3 cup of coarse burghul

1 onion, chopped

2 medium tomatoes, peeled and chopped

1 tbsp tomato paste

1/2 lemon

1/2 tbsp dry mint

Mild paprika or chili

Salt

Olive oil or butter to taste


  1. In a pot place the lentils, burghul, onion and tomatoes; cover with hot water and bring to boil

  2. Cook for ~20 mins stirring occasionally and adding hot water as required

  3. Add the remaining ingredients then taste to adjust flavor; cook for about 10 more minutes or until the burghul is cooked

  4. Mix with a soup blender keeping a slightly rough texture

  5. Serve and enjoy! <3
