Aleppo reshteh | Lentil soup recipe

A heart-warming Syrian lentil soup with pasta, onions and dry mint; enjoy the flavors of the Middle East with this easy, delicious recipe.


Prep time: 10 mins

Cooking time: 20 mins


1 cup of washed brown lentils

1/2 cup of maccheroni pasta

1 large onion, chopped

Dry mint

Vegetable oil

Olive oil

Salt and pepper to taste

  1. In a large pot cook the lentils in ~2L of water for about 5-10mins or until they soften, then add the pasta

  2. Stir occasionally adding hot water as required to keep 2 fingers of water above the lentils

  3. In a side pan fry the onions in 1/2 cup of oil (half vegetable & half olive oil) until they turn golden light brown

  4. Once the lentils & pasta are cooked add the fried onions, mint (about 3/4 tbsp), salt and pepper

  5. Cook and stir for final 2 minutes then serve!
