Lebanese lentil soup recipe

A homey lentil soup rich with onion, cumin, turmeric and lemon flavors. A Middle Eastern classic often served with crispy fried bread- do not miss out on this delicious gem!!

 

Prep time: 10 mins

Cooking time: 20 mins

Serves: 4-6


1 cup of orange lentils, washed

1/3 cup of rice, washed

1 onion, chopped

1 carrot, chopped

1/2 tsp cumin

1/4 tsp turmeric

Juice of ~ 1/2 lemon

Vegetable oil

Olive oil

Salt and pepper


  1. Place the lentils, rice and carrot in a large pot. Cover with hot water (at least 3 fingertips above) and cook on medium heat stirring occasionally for about ~15 mins

  2. Meanwhile in a separate pan fry the onions until they soften using both vegetable and olive oil then set aside

  3. Once the lentils, rice and carrot are cooked, stir in the cooked onions and add the remaining ingredients

  4. Taste and adjust the seasoning if required (I like to add an extra drizzle of olive oil for more flavor) then use the soup blender to smoothen the mix

  5. Serve with a side of toast, fried bread or extra slice of lemon- enjoy! ;)
