Spinach and meat stew recipe
A heartwarming spinach and meat stew recipe with garlic, coriander and tomato flavors topped with pine seeds. Best enjoyed with a side of butter-cooked vermicelli rice!

Serves: 4
600 gr fresh spinach
300 gr minced beef
2 cloves of garlic, minced
1 tbsp fresh coriander
1/2 tbsp dry coriander
1 cube of vegetable or meat broth
1 tbsp tomato paste
Chili powder (optional)
Pine seeds to garnish
Salt and pepper to taste
1. Heat some vegetable oil in a pan to fry the beef; season with salt and pepper then drain and set aside
2. In a large pot heat some vegetable oil and fry the coriander and garlic for 1-2 mins (careful not to burn the garlic!)
3. Mix in the spinach with a drizzle of water. Stir the ingredients, cover the pot and cook on medium heat for about 10-15 mins, or until the spinach is almost cooked/dark green
4. Add the remaining ingredients followed by the cooked beef; stir occasionally and uncover the lid to reduce the sauce if required
5. Garnish with pine seeds and serve with a side of plain or vermicelli buttery rice!
