One-pan baked salmon with vegetables recipe

Easy and delicious salmon fillet bake with potato, tomato and asparagus marinated in garlic, butter and YES- chicken spices!!


 

Prep time: 10 mins

Cooking time: 40 mins


Main ingredients:

300gr salmon fillet

2 medium potatoes, chopped in cubes

2 spring onions

Cherry tomatoes

Asparagus

Lemon

Garlic powder

1 tbsp fresh parsley, chopped

Olive oil


Marinade:

1/3 cup of melted butter

1/2 tsp chicken spice mix (yes, chicken!)

1 clove garlic

Salt and pepper to taste


  1. Marinate the salmon for 30 mins using half the marinade quantity (create small cuts in the salmon to help absorption)

  2. Pre-heat the oven to 200C

  3. In a baking tray season the potatoes with olive oil, garlic powder, salt and pepper and bake for 20 mins at 200C

  4. Take out the tray and mix in the tomatoes, asparagus, onions, remaining marinade and half the parsley quantity

  5. Add the salmon on top and season with parsley and lemon

  6. Bake for another 15-20 mins at 200C or until the salmon is cooked

  7. Serve and enjoy!!
