Cheesy zucchini egg casserole recipe

Fluffy egg bake with zucchini, mozzarella and parmesan perfect for any time of the day! An easy and quick vegetarian recipe which everyone will surely love :)


Prep time: 20 mins

Cooking time: 20 mins

Serves: 4

4 eggs

1 zucchini, shredded

1 tsp baking powder

1/2 tsp oregano

1/2 tsp garlic powder

1/4 tsp paprika or chili powder

Mozzarella, shredded

Parmesan, grated


Olive oil

Salt & pepper

  1. Heat 2 tbsp of olive oil in a pan and sauté the zucchini shreds until they soften; set aside to cool

  2. Pre-heat the oven to 180C

  3. Mix the eggs, baking powder, oregano, garlic, paprika, salt and pepper in a bowl and add a drizzle of olive oil to the mix

  4. Grease & flour a baking pan by spreading a tablespoon of oil all around with a tissue (including the edges) and coating with flour

  5. Add the egg mix and sprinkle mozzarella and parmesan on top

  6. Bake for ~20 mins at 180C

  7. Serve and enjoy, placing leftovers in tupperware for the next day!
